Scrumptious Chicken n’ Dumplings

As promised, here is the recipe from my Instagram post today.

Sundays are tiring after soccer games so this was a perfect, easy meal after a long day. This is another quick meal for those days where you may want something filling that doesnt take alot of hardwork.

All of the ingredients were things I always keep on hand or buy monthly for our meal planning; so there was no cost to me. I can estimate this costing roughly $20 if you have to run out a get things.


2-3 chicken breasts (I baked these first; 20min at 350 , let them cool to shred)

4 cups of chicken stock

**1 can of Cream of Mushroom Soup (traditionally you would use Cream of Chicken but I didnt have that so I used this and it gives it a nice flavor!)

2 chopped carrots

3 chopped celery

1 can of Grands Biscuits (you can opt to homemake dumplings but I didnt feel like it today)


Prep Time: 15min

Cook Time: 25 min

1. In a large pot – heat broth, chicken, soup and poultry seasoning to boiling over medium-high heat; reduce heat to low. Cover; simmer 5 minutes, stirring occasionally. Increase heat to medium-high; return to a low boil.

2. On lightly floured surface, roll or pat each biscuit to 1/8-inch thickness; cut into 1/2-inch-wide strips.

3. Drop strips, one at a time, into boiling chicken mixture. Add carrots and celery. Reduce heat to low. Cover; simmer 15 to 20 minutes, stirring occasionally to prevent dumplings from sticking.

After plating for my family i added oregano and pepper to season, you can use whatever you like and if you want some spice ; a few drops of hot sauce will do.
